Freezer Food Friday-Lasagna

I can't believe it is Friday already. What a crazy week it has been! Here's a weekly-wrap up and a recipe.

Yes, I know you have all been wondering since last Friday if my bathroom supplies were organized this week. They were. I won't bore you with photos or the details.

One Night Out on the (Small) Town:

Last night we attended what was supposedly the "social event of the year" here in Small Town. Social events are not my fortet. K-squared's mom got us each an appointment with a hair and make-up girl so we would look presentable. When Juan Carlos got his first look at his new and improved mom he said, "Mom, you look ugly". Great for the ol' confidence. Luckily, Guapo did not agree!

The event STARTED at 9:00. With the Latin Lateness factor, things didn't get under way until 11:00, which is just about my bedtime. All and all it was a bust. It was filled with bad, cheesy music, played at a volume that made insipid small talk all but impossible, cheap appetizers (ritz crackers and cream cheese?), and worst of all, not being able to freely take pictures so I could more fully blog about it (Guapo warned me photos are frowned upon when so much alcohol is being consumed).

Dinner. was. served. at. MIDNIGHT.

And with it my one chance to semi-inconspicuously take a couple of photos. (Our rich friends were sitting across from us and they thought I was taking a picture of myself). Here's what dinner looked like:

Notice the side of green pasta. It was topped with stinky cheese and a cherry. A maraschino cherry to be exact. What the heck? No Cool Story, is this normal?

Recipe

This week's freezable idea is lasagna. Lasagna is a pain in the rear to make, so when I get around to doing it I always make at least two batches, and sometimes 3. My mom makes the best lasagna; here's how she does it.

First, you prepare one batch of sauce (she makes homemade, but I usually just do one jar of Prego and 1 lb. of ground beef). Cook 9 lasagna noodles to al dente. Prepare cheese filling by mixing the following:

1 16 oz. cottage cheese (you can use ricotta if you prefer, or a mixture of the two)
1 egg
1/3 cup chopped fresh parsley
1 tsp garlic salt

You will also need 4 cups of shredded mozzarella cheese.
Put a little of the sauce in the bottom of a greased 9X13 pan and then layer in the following order: noodles, cheese mixture, mozzarella, sauce, noodles, cheese mixture, mozzarella, sauce, noodles, sauce, mozzarella cheese. Sprinkle with Parmesan cheese.

To serve immediately: cook covered with foil at 350 degrees for around 45 minutes, or until bubbly on top.

To freeze: cover with Saran wrap and then foil. Let it cool in the fridge and then transfer to freezer.

If you like, serve with a maraschino cherry on top.

I don't know, let's eat something green, sprinkle stinky-feet cheese on it and then, let's top it all off with a cherry, BWAHAHAHAHAHA! I'm glad you took pictures, otherwise people might believe you were embellishing it to be "blog worthy" ;)

I’m glad you finished the bathroom, that you got to get all fancy for your social event, that Guapo welcomed the new and improved mom.

I love the fact that you can appreciate the "Latin Lateness Factor", dinner at midnight yes indeed, typical.

I really like lasagna, saying it’s a pain in the rear might be an understatement, it sounds good, but I still have to make the
butter horns , which look delicious. I’m beat, need to take a long break.

Maraschino cherries are scarey anyway, let alone on pew-rific cheese. Of course, it could have been one of the green maraschinos. Ew. Those are just dye gone wrong, in my book.

I like your recipes...I'm gonna start stocking my freezer.

It was a choice between starving or eating the green pasta. I cannot believe that I could be that hungry! Dinner at midnight...at least the pasta was still hot.....who would have thought...Fashionably late takes on a whole new meaning for me!

I don't like maraschino cherries especially on green pasta. Yuck!! Don't you love kids honesty? My 5 yr. old boy just asked me the other day why I was bigger than dad? What a confidence booster. I'm really not, but I guess he thought I was. The honesty of children.

I loved the flip! Although the first time he did it would have scared the crap outa me! I'm sorry your Latin evening wasn't all you hoped and diligently prepared for. At least you get to keep your new look.

Oh Mexico is famous for stinky cheese! Your plate brought back such memories! I can't say I ever had a cherry on top though.

I love lasgna in the freezer! It is the best. I will have to try your recipe.

I got my Friday recipe up........on Saturday. Had trouble posting to the site on Friday. Dang Dial-up Connections.

I guess the homecoming dinner I was planning for you is out. I had the green pasta and marachino cherries ready to go. Now, I'm back to the original stuffed manicotti idea.

Sorry -- one more comment about the flip.... How cool! He is only 3? That is amazing. My 3 year old will barely put her toes in the water.

Juan Carlos JUST turned 3. My kids have all been fish, but nothing compared to Juan Carlos! He can almost swim the length of our pool by himself. Crazy!
