Although I totally agree with you on not having balanced meals, I too come from a 3rd world country like your maid's. I no longer cook that way, but I did for a long time, because it is cheap. And when you are poor, if you want to eat, you have to eat cheap of do without. The second reason it's because we don't know any better. She was raised eating that way, so it's perfectly normal for her. She probably belives she is doing a great thing for your family! :-)
I wanted to suggest that perhaps you can sit down and write the weekly menus, and she can go shopping and cook for you. That way it will avoid the whole "Yuck" scene at dinner time - what do you think?

No more maid, no more driver...just lots of laundry, cooking, and time in my minivan. It's all good. :)

That's hilarious! Sometimes our dinners look like that though, when it's 'eat whatever's in the fridge leftover night'.

Maybe you could show her a food pyramid chart or something, or tell her every meal has to have something green, besides olives.
